Vegetable Fried Rice Wrapped in Lotus Leaf
Ingredients
300g Cooked Fragrance 43°N Jilin Japonica Rice
1 pc Fresh lotus leaf
100g Carrots
4pcs Large Chinese mushrooms, soaked
4 pcs Asparagus
50g Salty preserved radish (soaked and rinsed with water)
50g Sweet preserved radish (rinsed with water)
2 Fragrant garlic
Seasoning
1 tbsp Light soya sauce
Dash of Ground white pepper
1 tbsp Cooking oil
Method

Rinse lotus leaf clean, blanch leaf in boiling water to soften the leaf.

Dice all ingredients, then blanch in boiling water until cooked.

Preheat cooking oil in wok; add all ingredients to be stir fried. Add rice and 1 tablespoon of light soya sauce and continue to stir fry until contents are well mixed. Add pepper.

Place fried rice in lotus leaf, wrap it up and steam in a steamer for 5 to 10 minutes before serving.
